In our kitchen, even the outer layers have a purpose.

Each month, we produce our own black garlic—slow-fermented until it’s soft, sweet, and deeply umami. Once peeled, the process doesn’t stop. The leftover skins, often overlooked, are steeped in oil and transformed into something new: a black garlic oil that brings warmth and depth to the final touch of a dish.

It’s a quiet reminder that there’s value in what’s left behind—and that flavour can often be found where you least expect it.

Our first Cultured Conversations evening welcomes Dawie Botha, Head Winemaker at Anthonij Rupert Wyne, known for his expressive blends and a winemaking style that balances old-world complexity with new-world vibrancy.

Guests will enjoy a six-course tasting menu showcasing Chef Callan Austin’s ongoing exploration of fermentation—designed to bring bold, layered flavours to life—paired with a curated selection of estate wines guided by Head Sommelier George Young.

Featured wines for the evening include:
- L'Ormarins Private Cuvée – Elegant, refined Cap Classique showcasing finesse and complexity.

- Cape of Good Hope Altima Sauvignon Blanc – Bright and vivid, with tropical fruit notes and a flinty minerality.

- Cape of Good Hope Serruria Chardonnay – Lively, revealing layers of lime, nectarine, and subtle oak.

- Anthonij Rupert Optima – A plush Bordeaux-style blend with rich dark fruit, warm spice, and hints of cedar.

'Freshness' – the first starter on both our Epicurean and Odyssey menus.

This dish is designed to awaken the palate with acidity, vibrancy, and a refreshing chill. Served over ice to keep it bright and crisp, it sets the tone for the experience that follows.

At its base is a panna cotta made from horseradish and baobab. The baobab is sourced from Zimbabwe through Samson, a former colleague of Chef Callan’s, who works with local women to refine and import this rare ingredient. The fruit arrives as small pips coated in dried, tangy pulp—subtle, unique, and hard to come by.

Set atop the panna cotta is a jelly made from a curry leaf extraction, followed by cured, cold-smoked Scottish salmon sashimi and lightly cured trout caviar.

At the table, an iced broth of carrot, galangal, and tamarind is poured over the dish. Its surface is finished with a smoked kombu oil—made by charring the leftover seaweed from our dashi over coals in the Diablo oven and infusing it into a neutral oil.

'Weekly Cut' - This plate begins long before it reaches the pass—when a whole springbok is brought into the kitchen and broken down, muscle by muscle. As the carcass naturally dry-ages, we work our way through it, allowing each cut its moment on the menu.

This week the loin is featured, paired with crisp set polenta and a smoked, braised cabbage roll filled with Cremonzola. The dish is finished with an airy cream made from the same blue cheese and a beetroot and pink peppercorn reduction, built on stock made from the venison bones.

It’s a dish that reflects our approach to cooking—thoughtful, evolving, and deeply rooted in respect for ingredient and process.
