SUMAC RUMP KEBABS
Rump kebab, marinated in sumac spice, crushed garlic, red onion & mint.
Accompanied with a side of Mediterranean style couscous & roasted seasonal vegetables.
Sumac comes from the Arabic “summaq,” which means “dark red.” It is a crimson red, astringent spice popular in Middle Eastern cooking. It's made from the berry fruit of the Rhus Coriaria shrub.
Benefits of Sumac Spice:
Sumac is one of the most powerful anti-inflammatory spices out there.
It ranks high on the ORAC chart, which means it's packed with antioxidants & could neutralize free radicals that can cause cancer, heart disease, & signs of aging.
Studies have shown that daily intake of sumac for three months will lower the risk of cardiovascular disease among people with type 2 diabetes.

Benefits of Bamboo Shoots:
Bamboo shoots are a powerhouse of proteins, carbohydrates, fiber & minerals. These shoots are very low on fat & sugar making it an ideal snack for the diabetics. The presence of fiber in large quantities known as nutraceuticals helps in dealing with gut issues. Several studies in recent times revealed that ample amounts of antioxidants, with phenolic compounds in these shoots, help in fighting free radicals & exhibit anti-cancerous, antibiotic & anti-viral properties.
Benefits of Lemon Grass:
Lemongrass might help prevent the growth of some bacteria & yeast. Lemongrass also contains substances that are thought to relieve pain & swelling, reduce fever, improve levels of sugar & cholesterol in the blood, stimulate the uterus & menstrual flow, & have antioxidant properties.

The BUDDHA BOWL
The Buddha Bowl was a dish I made countless times out in Pringle Bay. I was working as Vegan Chef then & loved how so many different ingredients & textures made for the perfect taste bud explosion & an array of rainbow colors.
Benefits of Chickpeas:
Chickpeas are brimming with vitamins & minerals. Choline, which helps your brain & nervous system run smoothly, as well as folate, magnesium, potassium & iron.
Chickpeas contain a starch called amylose that takes your body a longer time to digest than some other starches. This helps prevent spikes in blood sugar & insulin. It can also help control blood sugar in people who already have diabetes.
Benefits of Sauerkraut:
Sauerkraut is rich in probiotics. This is what aids the digestive process & maintains healthy gut flora. The fiber is also beneficial, giving your digestive tract a workout. It may reduce digestive symptoms like bloating & gas.
Sauerkraut may even help with certain digestive disorders, like IBS.
The brain has a close connection with the gut. It’s all about the flora & its relation to brain health & even the reduction of stress.
