Easy tomato gravy
Ingredients
5 medium tomatoes
Medium green pepper (chopped )
Medium red pepper (chopped)
Onion (chopped)
5 cloves garlic (minced)
1 tbsp curry powder
1 tsp paprika
1 tbsp six spice
1 tbsp garlic & herbs
1 tbsp Garam masala
1 tsp all in one seasoning
2 tbsp oil
1 and 1/2 tbsp sugar (optional )
Salt to taste
NB: you can use your favorite seasoning and according to your liking.
Preparations
1. Peel and chop the tomatoes
2. In a pan or pot add oil, green pepper ,red pepper, garlic and onion fry for 5-7 minutes then add your spices
3. Add chopped tomatoes stir,then add brown sugar cover and cook on medium heat for 40-50 minutes
NB: keep stirring gently while cooking. Done ✅✅✅

Ishi's Rich Banana Bread
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup butter, softened
¾ cup brown sugar
2 large eggs, beaten
2 ⅓ cups mashed overripe bananas
Instructions:
1️⃣ Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan. 🍞
2️⃣ Mix Dry Ingredients: In a large bowl, whisk together the flour, baking soda, and salt. 🍚
3️⃣ Cream Butter and Sugar: In a separate bowl, cream together the softened butter and brown sugar until smooth and fluffy. 🧈 Add the beaten eggs and mashed bananas, and mix until well combined. 🍌
4️⃣ Combine Mixtures: Stir the banana mixture into the flour mixture until just combined. Do not overmix. Pour the batter into the prepared loaf pan. 🥄
5️⃣ Bake: Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Allow the bread to cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely. ⏳
Prep Time: 10 minutes
Cook Time: 60-65 minutes
Total Time: 1 hour 15 minutes
Servings: 1 loaf (about 8-10 slices)

Amanqina/Chicken feet
Cooking duration: 45 Minutes
You will need:
• Chicken feet
• Chicken spice
• Barbecue spice
• Paprika
• Rajah Flavourful and Mild Curry Powder (The purple one)
• Knorrox Chilli Beef stock (Beef if you don’t want them to have a little spicy sting)
• Dried Herbs-mixed or Parsley
• water
• 1 Chopped onion
Method:
-Rinse your Chicken feet in cold water and pace in a pot.
-Add warm water to the pot till most of the Chicken feet are submerged.
- Add your rajah, spices and Stock Tubes
-leave to boil for 20 minutes.
- N.B -do not close the lid of the pot fully as it tends to bubble up and spill over in the first 20 minutes of cooking.
- Add your Chopped onion and Parsley.
-leave to simmer for the remaining 25 minutes at medium to low heat.
-when the gravy has darkened and both the chicken feet and gravy have a sticky residue they are ready to be served and Enjoyed🤭
NB- I can’t give you exact measurements because I don’t know the quantity of the Chicken feet that you will be cooking.

BEEF LASAGNA RECIPE
Ingredients:
* Lasagna sheets
* 1kg Mince
* Crushed garlic
* Tomatoes or (tomato paste)
* 1 Onion chopped
* Olive oil
* Use spices of your choice
* Cheddar cheese & mozzarella cheese grated
For Sauce:
* Plain cake flour
* Butter
* Full cream milk or low fat milk
Method : Stage 1
Fry your mince, tsp crushed garlic, oil and add all your spices and pinch of salt,fry until mince turns brown, then add onions and fry until golden brown.Add your grated tomato or tomato past and then add tablespoon brown sugar (optional)or bbq sauce tablspoon.Add brown onion soup/tasty hearty beef soup adding water while stirring until soup thickens..Then simmer for few mins at low heat
Stage 2: Making the White sauce - Medium to low heat, Melt the butter in pot and when butter has melted add flower while stirring and immediately pour milk while stirring until your sauce is smooth and lightly thick..Add grated cheese,pinch of salt and black pepper to taste.
*while doing your sauce you can put your Lasagna sheets in luke warm water so they are not very hard when using them..*
Stage 3 - put all your cooked ingredients together get a casserole dish and grease it with bit of butter then whit sauce.Then lay your lasagna sheets first depending on size of casserole i used three sheets at bottom then cover with Cooked mince, then pour white sauce and level,add grated cheddar/mozarrella mixed cheese then sheets again repeating until top of your casserole *layers are determined by amount of your mince and sauce* usually its three layers then cover with grated cheddar/mozzarella mixed cheese and garnish with fresh parsley or dried parsley..
Bake at 200° for 30 minutes and make sure the top turns into golden brownish colour..Remove from oven and let the Lasagna set for 15/20 minutes before cutting and serving.

Pickled Fish
We grew up with the most delightful coloured people - and this was Aunty Cutters recipe!
My daughter loves and must have pickled fish!

Fish a day or two before the time so the flavours can mingle...
Ingredients
60ml cooking oil
3 large onions, cut into thin rings
2 Tblsp mild curry powder - I used Rajah
1 Tblsp hot curry powder (or use more mild)
1 tsp tumeric
3 bay leave
tblsp whole peppercorns
1 tsp whole allspice or allspice powder
A few bay leaves
1 tsp coarsely crushed black pepper
1/2 cup white vinegar
100 g sugar
2 kg hake fillets, cut into portions (use a mild white fish)
Sea salt and freshly ground black pepper
Flour, for dusting
Salt and pepper
Water
Method
In a large pan add 1 tbls oil and, when hot, gently sauté the onion until translucent. Add the spices and curry powders and whole peppercorns and fry gently for a few minutes, or until fragrant.
Add the bay leaves
Sprinkle some cake flour (about a tablespoon full) over the simmering onions and stir it through the onion mixture - add a quarter cup of water and cook and stir until the sauce thickens.
Add the vinegar and sugar and stir until the sugar has dissolved. Simmer for 20 minutes.
Now dust the fish with salt, pepper and flour (add some mild curry powder as well) and fry in the remaining oil, add more oil if you like - until crisp and cooked through. The fish should be crisp and yet juicy.
Place a layer of fish in a deep very clean glass or non-metallic container and pour a little of the hot sauce over it, to cover. Continue layering fish and sauce until all the fish is covered. If there is any juice or gravy from frying the fish, pour that over as well.
Cool, then chill until ready to serve.
You can divide the recipe if you like. To make half the quantity.

- Turn left onto Mau Mau Road and continue for another 300 meters.

- If you are driving, take the A104 highway towards Nyanga.
- Continue on the A104 until you reach Nyanga Avenue.
- Turn left onto Nyanga Avenue and drive for approximately 2 kilometers.
- Look for parking spaces along the road near Mau Mau Road or any nearby side streets.
- Once parked, walk along Mau Mau Road for about 300 meters.
- The De_Luxe Eatery will be on your right.
