From the get go there was a warming connection between myself and my client…and then to walk into this incredible paradise of calm, warmth and welcoming hospitality…

A fun, memorable evening packed with laughter, delectable food, inspiring energy and good food vibes.

A very big, heartfelt THANK YOU to each and every one of you who made the time to join the first evening workshop back in my home. It was an absolute pleasure meeting new faces, seeing foodie friends, cooking delicious food and enjoying the evening together!

And, of course, thank you, for your patience…it was a sad abrupt departure due to my hospital visit…but next time I will wear steel gloves……….🧤

There is something special about a bowl packed or beautifully arranged with all of your favourite foods.

My version of Turkish chicken, using deboned, skinless thighs, marinated in a fragrant, zesty yogurt sauce and cooked on the fire. 🔥 

Served with a red onion, tomato, garlic & herb couscous, homemade tzatziki, buttery sweetcorn & avocado, it made the perfect, simple dinner…and healthy too!

Sundays are fun days…days for brunching, lazing and spending quality time with loved ones.
Today was no different - cake baking with the little miss, bread baking for tomorrow, curry making because the weather called for it…all while this beautiful cut of lamb shoulder slowly roasted in the oven…

Think lemon, garlic, thyme, wine and fragrant, warm spices, served with fire roasted sweet potato, a simple rocket salad & anchovy, garlic & chilli dressing…

Simply delicious!

The grey, cold and wet weather called for a comforting mutton curry…tender mutton cooked in a rich blend of spices and slow simmered until full of flavour.

Served with natural yogurt, avocado and basmati rice, it was the perfect meal to satisfy my craving for a bit of spice.

ROASTED ARTICHOKE, LEMON & ANCHOVY SPAGHETTI

Yesterdays lunch hit all the right notes…crispy edges, zesty flavor, and that umami depth from the anchovies. 🍝🍋

i n g r e d i e n t s | s e r v e s 2/4
For the artichoke hearts
1 Can artichoke hearts, drained and dried
Olive oil
Salt & black pepper
6 Garlic cloves, skin on, lightly smashed

For the pasta
300g spaghetti, cooked according to package instructions (reserve 1 cup cooking liquid)
1 Onion, thinly sliced
2 Garlic cloves, sliced
3-4 tbsp olive oil
Small bunch lemon thyme, leaves only
1/4 Cup sliced artichoke
5 Anchovy fillets, chopped
1/2 tsp red pepper flakes
Juice & zest of 1 lemon (to taste)
1/2 cup grated Parmesan (optional)
Chopped parsley, for garnish

m e t h o d
Preheat the oven to 200C.
Toss the artichokes with olive oil, salt & pepper. Transfer to an oven tray. Add the smashed garlic.

Roast for 30 minutes or until charred on the edges and the garlic is soft. Remove and set aside.

In a large pan (or pot), warm 2–3 tbsp olive oil over medium-low heat.
Add the onion and cook, while stirring, until almost caramelised.
Add the sliced artichokes and toss.
Add chopped anchovies, garlic & thyme leaves. Stir and cook for 1 minute.

Add red pepper flakes.
Transfer the roasted artichokes to the pan and squeeze the soft garlic out of the skin into the pan.

Add drained pasta to the pan.
Add lemon juice plus a splash of pasta water.
Toss well, adding pasta water as needed until glossy and coated.

Season with salt & black pepper.
Taste and adjust:
• More lemon for brightness
• More salt/pepper only if needed (anchovies add salt)
Finish with lemon zest, parsley, and a generous helping of Parmesan.

Homemade flatbread straight into the pan…they always come out perfectly charred and fluffy. There’s nothing like fresh bread made in your own kitchen; no fancy equipment needed, just a hot skillet and a few simple ingredients. Food magic!
