What does it mean to work at one of the best restaurants in the world? 🏛️✨
It’s been an absolute honor to spend time inside the kitchen at . Being able to see this culinary machine at work, led by the genius mind of , was, to say the least, eye-opening.
The last two months have been one of the most beautiful and intense experiences of my cooking career: witnessing techniques and methods that felt like they were pulled straight from a science-fiction movie. Imagine multiple kitchens running simultaneously, producing 30+ “impressions” (as they call them) with 40 chefs on service, timing this symphony by the second. World class. ⏱️🔥
I feel strongly that fine dining and molecular gastronomy should be recognized as true art. While the artistic expression is undeniable, governments and organizations rarely recognize it in legal terms. Without public subsidies, this industry relies on private investors who aren’t just building businesses, they are building legacies. It is an art movement led by master artisans, driven by a manifesto and a unique modus operandi.
Fine dining should be democratic. Like any respected art form, it should be accessible. With better funding, more people could experience an art form that challenges, moves, and reshapes you: a multi-sensory experience that is nothing short of psychedelic. 👁️🌀
But in the end, my favorite part was meeting the humans who keep this machine running smoothly. I loved observing what moves them, their work ethic, and their way of leading. To the team: well done. It is not easy. The sacrifice, the hours, and the relentless search for perfection in every dish and every system is inspiring.
I have immense gratitude for this internship and for the chance to be in this environment.
