A cocktail inspired by the meeting of land and sea.
Tomato and rice koji, fermented with kelp, form the foundation of this savoury pour. Layered with clarified tomato essence, num num kefir, koshu and smoked vinegar, each element contributes to the depth, salinity and brightness of this serve.
Indigenous Sunrose adds delicate texture, and tomato caviar served on a kelp spoon offers a final taste of the ocean.

Karoo lamb loin braaied over flame and paired with the bright acidity of compressed apple infused with Cape mountain sage oil. Served alongside an apple, miso and aubergine purée, sunrose from the farm, and finished with a lemon jus.
A composition that balances smokiness, sweetness and savoury depth, celebrating the ecosystems and ingredients of the Cape.

Designed as the opening chapter to the FYN experience, a trio of cocktails is served, guiding the palate through a gradual progression of flavour.
Beginning with bright floral notes, moving through freshness and herbaceous complexity, and finishing with deep savoury umami, each cocktail is built around indigenous South African ingredients.
Flower is delicate and fruit-forward, built with African prickly pear, while Leaf introduces a green botanical character through Cape May. Ocean finishes with salinity, fermentation and layered depth, using lacto-fermented tomato, num num berry and Cape kelp in koji.
An opening expression of the experience ahead.

To reach the location of the restaurant on Parliament Street in Cape Town using public transport, take the train or bus to Cape Town Station. From there, walk towards Adderley Street and continue walking until you reach Parliament Street.
If driving, take Nelson Mandela Boulevard from any direction and turn onto Roeland Street. Continue straight until you reach Parliament Street and find parking in the surrounding area. It's worth noting that parking can be limited during peak hours.
