The Dream Team

Pieter recently joined us, taking over the reins in the Kitchen as head chef. He hails from Witbank in Mpumalanga and although he never thought that food would be his calling, a visit to Overture in his school years changed his entire career path. Like any good South African, he loves to Braai at home, but his guilty pleasure is a good old Lasagne.

Quintin, originally from the Free State, has been with the company for many years running Eike, but moved to Chorus last year to head up the Front of House team. He likes a good, wooded Chenin and Chardonnay and says you can’t go wrong with cheese. I mean, who doesn’t like cheese. We love him for his great sense of humour and his ability to create an unforgettable experience for his guests. He truly has perfected the art of hospitality at heart.

Beautifully butterflied prawn filled with an herbed chicken mousse, dressed with pickled daikon and orange dressing accompanied by a fortified prawn and chicken sauce with cream and butter.

South African music legend, Koos Kombuis, will be showcasing his talents at Chorus with a live music evening on Friday, 24 October. Welcome snacks and a cash bar will be available on arrival. Once guests make their way down for the performance, they have the choice of a glass of wine or a beer to enjoy during the performance followed by dinner.

A great piece of meat needs very little to taste incredible. FFMM provide us with the best cuts of meat and this sirloin is cooked to absolute perfection. The beef fat is used to fry the pom anna in, it is also used in the ju. You don’t want to miss out on this dish currently part of the autumn special for only R795 per person.
