These Peppermint Crisp Flower Tartlets are made with laminated croissant dough, twisted into a flower, baked until golden, then filled with peppermint mousse and lime sponge, finished with generous shards of Peppermint Crisp chocolate.

70% Rye bread.
A little-known fact about REAL 70% rye bread is that it actually requires a "cure time" of at least 24 to 48 hours after baking before you should even slice it.
If you slice it too soon, the inside will be sticky and leave a "paste" on your knife.

The great thing about going into winter is that citrus fruits are back!!! So I made my "Corsican Forest" Brookie.
A traditional butter cookie shell with orange zest and crushed rosemary filled with chestnut flour brownie & roasted pecans and topped with honey infused dark chocolate ganache.
I made blanched orange zest & rosemary as decoration... I will have to make candied ones for better shelf life though.
