When you’re looking for a winter cocktail, you can’t go wrong with brandy. Our Spicy Brandy Martini is crafted with the sublime 10-year-old, expertly cinnamon-infused in-house, before being combined with a red wine syrup and a sharp splash of lemon. Think mulled wine but in cocktail form, and much more sophisticated. It's the perfect prelude to our winter Street Food Fiesta.

These amagwinya and smoked snoek paté could not be more typically South African! 🇿🇦
No matter who dines with us at TTK Fledgelings, they almost always say it's one of their absolute favourite things on the menu. So of course, we had to include them on our Street Food Fiesta menu!
The amagwinya are served hot and crispy with a perfect sprinkling of salt, while the snoek paté is beautifully creamy and smooth. It is just the best combo.
We’re a restaurant.
We’re a training ground.
We’re a place where dreams come true.

* The Core: Silky bone marrow - nature’s butter
* The Brightness: A vibrant Salsa Verde to cut through the richness.
It’s rustic, it’s decadent and it’s waiting for you at The Test Kitchen Fledgelings.

Our Tuna Tartare starts with hand-chopped tuna, topped with shaved radish and carrots to keep things bright and crisp. Served with miso & black garlic mayo for creaminess and a zesty yuzu dressing for a citrusy kick. Finished with a dusting of Togarashi heat and savoury nori flakes for seaside crispness. Served with a parmesan and pap tuille to scoop up all the goodness.

Our Beef Tataki is a total flavour trip. We flash-sear a Szechuan-crusted fillet, slice it thinly and layer it up with velvety rich bone marrow. Then come the vibrant toppings: nutty walnut salsa, daikon pickle, zesty orange segments and peel, angel hair chilli and some garlic crunch. Finished off with a sharp Szechuan vinaigrette, it’s a high-contrast dish that stays light, fresh and juicy.

Our Pap en Vleis is a classically South African dish featuring slow-roasted lamb shoulder until it's fall-off-the-bone tender, served with thyme-infused pap (maize meal). Finished off with a roast tomato and lamb jus, spicy chakalaka (relish) and a shaving of goat's cheese. It is warm and comforting and for us South Africans, a taste of home.

Sometimes, you just need a light finish to a meal. Our Lemon & Berry Mess hits the spot. Minted berries pair perfectly with a silky white chocolate mousse. Lemon custard adds citrusy tang and the meringue shards melt the moment they hit your tongue - just enough sweetness to satisfy the craving.

We live for the energy of a packed restaurant - the sound of effortless conversation and bursts of laughter - there’s an unmistakable buzz when every seat is taken. When the service is effortless and everything clicks into alignment a certain kind of magic happens and we swear the food tastes even better!

If you love pistachios, then this dessert is for you. The delicate, sweet flavours of a poached nectarine is balanced by the nuttiness of the pistachio filling. Smooth creaminess is provided by the silky tonka bean pannacotta, while a pistachio feuilletine adds some texture.

Kingklip is endemic to Southern Africa, found almost exclusively along the west coast from Namibia to the east coast of South Africa. The name comes from the Dutch ‘koningklipvis’, which translates to "King of the Rocks”, referring to its preference for living in deep, rocky crevices on the ocean floor.
So the pan-seared Kingklip rightfully takes center stage in this dish, paired with the aromatic warmth of a Thai-style butternut broth.
It’s joined by a delicate Hake & Prawn ravioli, while fresh zucchini adds a clean, crisp finish to the plate. If you want to try something local, then this dish is for you.

Our tender, lean springbok loin is panfried in butter and paired with a slice of spicy, poached pear as well as a springbok, honey and pear jus that brings a gorgeous hint of sweetness to the plate. Keeping it local, it’s served alongside a roasted butternut cube topped with our savoury hazelnut XO for a bit of bite and then finished off with a cloud of thyme milk foam.
