Behind the perfect pour lies a commitment to quality. Crafted with exceptional espresso and premium spirits, our espresso martini is a celebration of balance, flavour, and craftsmanship. The rich intensity of freshly brewed coffee meets the smooth complexity of high-quality liqueurs, creating a cocktail that is both bold and refined. Elegant, timeless, and effortlessly sophisticated, it is the perfect accompaniment to an evening of fine dining.

There is something quietly special about the arrival of freshly baked bread at the table.
At Aubergine, our bread is baked in-house daily and served with a carefully crafted accompaniment, whether it be a seasonal butter, dip, or spread designed to complement each loaf. It is a small gesture, yet one that sets the tone for the meal to come.
For many guests, it has become one of the most memorable moments of the dining experience. We couldn’t agree more.

Over the years, a variety of artworks have found their way into Aubergine some gifted to us, others collected over time.
Each piece has quietly become part of the atmosphere and story of the restaurant, adding warmth, character, and a sense of home to the space.

Tonio’s Cut tequila, vermouth, lime and agave syrup, shaken until ice cold and strained smooth. Bright citrus, subtle sweetness and the kind of cocktail that disappears far too quickly.

From older vintages to newer releases, the cellar holds bottles that tell stories across generations. This 1987 Chateau Libertas remains one of South Africa’s most recognised classic red blends a wine that reflects an earlier era of Cape winemaking, beautifully preserved through time. Bottles like these bring character, history, and a sense of nostalgia to the cellar, sitting alongside both newer releases and carefully aged vintages collected over the years.

A recent evening at Auslese. Long tables, candlelight, flowing wine, and a room filled with conversation the kind of gathering that reminds us how special shared dining can be.
Our space is available for private dinners, celebrations, and curated events.

Balanced with precision and finished with elegance, our Whisky Sour brings together deep whisky notes, fresh citrus, and a delicate velvet foam in a cocktail that is both timeless and refined. An enduring classic, best savoured slowly.

Delicate lamb ravioli, thoughtfully prepared and full of rich, comforting flavour. A dish designed to be savoured slowly, alongside good wine and even better conversation.
A gentle reminder that we will also be offering lunch service on Thursdays and Fridays. We look forward to welcoming you.

A dessert that tastes like summer at its most refined.
Roasted pineapple, coconut sorbet, pineapple sauce, and fresh pineapple layered with a delicate cake dipped in white chocolate and yuzu. Tropical, bright, creamy, and impossibly refreshing every element balanced with intention.
One of those desserts that lingers in your memory long after the last bite.

The final touches are often what define a dish. Our ostrich carpaccio is delicately finished with wild mushrooms, radish, olive oil, and a careful seasoning of salt and pepper a composition that celebrates both restraint and precision. Ostrich carpaccio remains a rarity on most menus, making this a plate worth lingering over before we close for winter break.

If you’re in the mood for something refreshing without the alcohol, our Blood Orange Coconut Mojito is a beautiful choice. Crafted by our barman Tony, this vibrant blend of blood orange and coconut is bright, balanced, and exceptionally refreshing a quietly standout addition to the experience.

As winter settles in, we take a moment to slow down and reset.
A short pause, before returning refreshed for the season ahead.
We hope to share a table with you before then.

At the conclusion of your meal, a selection of handcrafted petit fours is presented delicate chocolates and refined confections, each made in-house a final expression of precision and restraint.
For many years, this gesture has been shaped in partnership with a charitable initiative dedicated to nourishing young lives and supporting literacy. Beyond the dining room, this commitment is sustained through ongoing contributions, with Chef Harold extending it personally during the festive season.
Guests are invited, should they wish, to participate in this considered extension of hospitality.
A signature of Aubergine where refinement is matched by purpose.

Our chef, Harald, is currently in Vietnam where even time away becomes part of the craft.
Surrounded by bold, layered flavours, the palate sharpens. It’s in the balance, the restraint, the unexpected combinations that simply work. One dish leads to the next, each revealing something new.
That influence doesn’t stay there it returns, refined, to the table.
