Alongside the w**es lining our cellar walls, these carefully stored bottles form part of a collection built over many years, bringing together remarkable estates, vintages and varietals.

Just beyond the kitchen, our herb garden at Auslese offers a small but meaningful connection to the ingredients we work with at Aubergine.
Fresh herbs are gathered as needed, bringing fragrance, freshness and seasonality from the garden directly into our dishes. A quiet reminder that some of the finest details begin with the simplest ingredients.
