Meet Dale, our Head Chef

For Dale, it started with cooking shows, what followed was a love for the history, precision and creativity behind food, as well as the camaraderie that comes with being part of a kitchen.

When it comes to the person who has had the biggest influence on him as a chef, the answer is simple: Glen Emil Foxcroft Williams . Having worked alongside him for almost a decade, Dale has learnt and grown under his guidance, making him the most significant influence on his career.

In 2017, Glen asked Dale to join him at Foxcroft. Nearly a decade later, he’s still here, now running the kitchen.

“The freedom to try new things and the people I work with are what have kept me here.”

His approach to food is equally straightforward. No unnecessary fuss, just good food.

“I like making tasty food and adapting things that I’ve seen with a more South African approach.”

Over the years, the kitchen has taught him more than just how to cook. Grit, understanding and the ability to keep calm during the storm are qualities he carries beyond the pass.

As a leader, he hopes his team leaves with more than just knowledge about food.

“I hope they take away not only more knowledge about food, but also a sense of enjoyment from the work environment we provide.”

As Foxcroft continues to evolve, Dale is focused on pushing further every day, both as chefs and as a team, while creating food and experiences that leave a lasting memory with every guest.

Meet Auryn Walton.

For him, cooking started with curiosity. What began as a childhood desire to learn how to cook became a career the moment he stepped into culinary school and he hasn’t looked back since.

Growing up in a Portuguese household, his grandparents shaped his approach to food, introducing him to the beauty of bringing South African and international flavours together.

Eight years ago, Foxcroft became Auryn’s first professional kitchen. Today, it has become a family and he is now one of our Junior Sous Chefs.

“Foxcroft has become a family. I come to work every day with people who share the same passion as me, producing awesome food and creating a positive environment. I wouldn’t trade it for anything else.”

When asked what the kitchen has taught him, his answer was simple: patience and respect. In an environment where everything moves quickly, patience keeps you grounded, while respect is something you earn and give in equal measure.

Now, as Foxcroft enters its next chapter, he’s ready to push those boundaries further, with a new focus on fine dining and telling our story through every plate.

“I think our potential is limitless.”
