NEW EXECUTIVE CHEF | We welcome Mike Shier, who is ushering in an exciting new culinary chapter at VONDELING at Vrymansfontein. After eight years in London, culminating in a Head Chef role at Michelin-starred Dorian, Mike is coming home with a clear ambition: to create food that captures the pleasure, generosity and flavour of eating in the W**elands.
His serious credentials in some of London’s most exciting kitchens bring confidence and experience to SCAPE, where his vision combines technically accomplished cooking with the warm and conviviality of a bistro. The ingredients, the setting and his own culinary instincts will be shaping what comes next.
Mike will also oversee the food offering across The Shed, Tree Bar and private gatherings, giving each its own expression of his flavour-first approach.

FROM NOTTING HILL TO THE CAPE WINELANDS | Welcoming our new Executive Chef
South African Mike Shier has made quite a name for himself in London over the past eight years, most recently as Head Chef at Michelin-starred Dorian. Now, back in the Cape, Mike has a new home at VONDELING at Vrymansfontein as Executive Chef of our Paarl estate.
Passionate about local seasonal produce, foraging and fire, Mike brings confident cooking to SCAPE’s table, where his ambition is to craft food that is delicious-first, flavour-forward and moreish, with classical foundations and the experience to draw on influences wherever they make a dish better.
Mike Shier’s SCAPE summer menu launches on 13 November 2026.

A FIZZ FOR THE NEW SEASON | Some favourites deserve a place on the menu all year. Our Elderflower Fizz is one of them, with a few seasonal tweaks to keep things interesting.
Right now, elderflower liqueur and gin meet grapefruit, with egg white giving it that lovely frothy finish. A brûléed grapefruit slice adds a little caramelised sweetness to the citrus bite.
